Carole B. Toth, 83, of Allentown, formerly of Hightstown, passed away at home surrounded by her loving family on Saturday, February 21, 2026.


Born in Plainfield and raised in Edison, Carole lived in Milltown and Bridgewater, then Hightstown for 25 years before spending her final years in Allentown with her daughter’s family. Deeply driven and committed to their business, Carole and her late husband Richard built Richard’s Trucking Company in Edison and ran it for over 30 years. 


Intensely curious and eclectic, Carole was an avid collector of history, a frequent viewer of the History Channel, and devoted family archivist. 


What time Carole wasn’t spending doting on her beloved grandchildren, she spent scouring the state’s yard sales, antique malls, thrift stores, flea markets and curbsides for treasures. She collected everything - an obscure mix of mannequin hands, cow figurines, whiskey jugs, clocks of all sorts and sizes, yellowware, Hall China and many, many chairs to name only a few. 


Carole spent her life collecting little pieces of history and the stories that came with them, and other things that simply made her laugh. She loved to laugh, and brought joy to years of Sunday dinners, raucous “Hat Parties” and decades of Christmas Eves. Throughout her life, Carole opened her home to those who needed it, whether it was adding an extra chair for a holiday meal or a month to get back on their feet. Carole loved things that brought her family together, and especially cherished her grandchildren, who she gave so much of her life and energy to, raising them and filling their lives with joy and wonder.


She researched her family history fastidiously. She spent years going through historical records with a fine-tooth comb and documenting all of her findings and personal memories for future generations to have and enjoy. Carole was the safekeeper of a ragtag collection of family heirlooms - peace pipes, heaps of china, a doll named Gracie of mysterious provenance, homespun flax linens, and blankets woven by women across many generations.


An avid gardener, Carole made a point to know the names of all the trees, flowers and weeds in her yard. She made her family pesto with basil grown in her garden. She saved perennial plants and flowers from previous generations, moving her family bulbs into each of the places she called home throughout her life. She will be remembered when the irises come up in spring and the strawberries come in summer.


Carole lives on in the heirlooms she’s saved, the flowers she planted, and the many baby blankets she crocheted. 


Predeceased by her parents, Nelle (Evans) and Omar Grazide; her husband of 42 years, Richard Toth Sr.; her son, Richard Toth, Jr.; and her brother, Richard Grazide. Carole is survived by her daughter, Lynne Cavallaro Diehl and her son-in-law, Timothy Diehl; her brother, David Grazide and his partner, Nancy Perrone; her sister, Nancy Kane; her grandchildren: Daniel Toth and his husband, Brian Petty, Alexandria Cavallaro and her fiancé, Alex Kolchinski, Riley Cavallaro and his wife, Alexis, and Katharine Diehl; her daughter-in-law, Patricia Toth; as well as many others to whom she was an honorary “Grammy” -- including her son-in-law’s children, Collin Diehl and Lindsay Goss, and their families; her beloved nieces and nephews; and the many neighborhood kids who came into her life and stayed in her heart.


Visitation for family and friends will be held on Thursday, February 26, 2026 from 3:00 p.m. until 6:00 p.m. at Simplicity Funeral and Cremation Services at Glackin Chapel, 136 Morrison Ave., Hightstown, NJ, where a funeral service will begin at 6:00 p.m.
