Elenita "Ellen" P. Day Obituary

Elenita P. Day “Ellen”, 83, of Hightstown, passed away on Tuesday, August 12, 2025, at home with her loving husband by her side.


Born in Malabon in the Philippines, Ellen came to the United States to join her sister. Before coming to the U.S, Ellen earned a degree in education and after graduation she started teaching high school level English and grammar. After moving to America in 1977, Ellen became employed with Mobil Oil’s chemical division located in Edison N.J. Her entire career there was spent with the accounting department until her retirement in 2001. Ellen married in 1982 and later settled in East Windsor. Up until her illness, she and her husband regularly attended Saint Anthony of Padua Church in Hightstown. 


Ellen loved reading and doing crossword puzzles. She followed pro tennis and golf. Like her husband, she loved the Boston Red Sox. She and her husband returned to the Philippines many times and along the way visited several countries in Southeast Asia. Other travels include Canada, Europe and Australia.


Family was most important to Ellen. She enjoyed looking after her nieces and nephews when they were younger. She had such a big heart and always had a smile on her face.  Those who knew her, loved her as she was one of the most caring and selfless people you will ever meet.  She was a prime example that there truly are good people in this world.  Ellen will be missed by many and will always hold a special place in everyone’s hearts.


Predeceased by her parents, Patricio and Magdalena Pacheco; her sister, Leticia de Dios; and her brother, Reynaldo Pacheco; Ellen’s memory will be treasured by her dedicated husband, Christopher Day; her siblings, Merlita Garcia, and Normita P. Mischutin; as well as many nieces, nephews, grand-nieces, and grand-nephews.


A Memorial Gathering for family and friends will be held on Saturday, September 27, 2025, from 1:00 p.m. until 4:00 p.m. at Simplicity Funeral and Cremation Services at Glackin Chapel, 136 Morrison Ave., Hightstown, NJ.


Cremation Services were held privately.
